What is the hardest part of running your own restaurant?
The hardest part is that everything happens nonstop. The hood is broken. We had to close the restaurant for five days. If the dishwasher doesn’t show, you become the dishwasher. Then, the cook is sick—you have to be a cook besides every other routine you already do, like shopping, making sure all the employees are happy and giving customers good service. You’re like the captain. You make sure you don’t sink in the ocean.
