What inspired you to open your restaurant?
I’ve been in the business pretty much all my life. Since I was a kid, my mom, she was a street vendor, so I grew up surrounded with food, my mom cooking, selling. When she came to this country, she really wanted to open up a restaurant but it really was hard. She didn’t have the income but eventually became very successful in Highland Park. The name of her place is El Huarache Azteca. I’ve always been inspired by the business that she has and the impact that she made here in this community. People started noticing, like Mexicans, who grew up where I grew up. They would find a dish that they would eat when they were a child. She was one of the first people to start selling that kind of street food here.
